What are the differences between the different P100 SSP burrs?

For most users, we generally recommend the SSP 98mm HU as a default, as we found it to be the most suitable burrset for most users and will cover most use cases well.

SSP 98mm HU: More forgiving for espresso, makes reasonably good filter brew too. Better for shorter/normal brew ratio (1:2-2.5). Recommended if you're doing mostly espresso (>70%), and occasionally filter brew (<30%).

SSP 98mm LU: More forgiving and has a wider sweet spot for filter brew. For espresso, it tends to work better with high brew ratio (1:3). Recommended if you're doing mostly filter (>70%), and occasionally espresso (<30%).

SSP 98mm Brew: Recommended if you're doing only filter brew. It may or may not work for espresso due to the cutter tooth geometry (dependent on coffee and may be subjected to minor batch to batch differences).

SSP 98mm Pre-2015 Cast: Mainly aimed for filter and 'Turbo' style or 6 bar EKpresso shots - slightly more aromatic and complex/layered (less 'clean') compared to Brew burrs in filter. Can be used for high-flow espresso/Turbo at lower pressure setting 6 bar. While it can work for espresso, it may not look like conventional espresso flow and flow under bottomless portafilter may appear a little chaotic at times.

SSP 98mm Ultra-Low-Fines: Slightly higher body compared to other 98mm offerings (but lower than traditional 64mm HU or conical burrs) and slightly more blended. For those looking for cup profile with toned-down clarity compared to other 98mm burrs. Rounded taste profile and has more base notes compared to other 98mm burrs. Can work for both espresso and filter brew. Perhaps the better option among the 98mm offerings for medium or medium darker roast while retaining some of the characteristics of the other high clarity 98mm burrs.

The shots from all 98mm SSP burrs are generally high clarity, with less focus on mouthfeel (but plenty enough). None of the burrs options provide traditional high-bodied shots, especially when they are used with lighter roasts. The differences between the SSP 98mm burrs are also more subtle when compared to the differences between SSP 64mm High Uniformity and SSP 64mm Unimodal.

In our opinion, the different 98mm burrs are usually just a slightly different way of presenting the coffee, but all of them are still excellent. We think you can't go wrong regardless of your burr choice.
